Most of your installed programs will go into the All Users folder. (C:\Documents and Settings\All Users\).

To change this, just cut the files you do not want to appear for all users, and paste them into the account you do want them displayed.

For example, to remove Adobe Reader from All Users, go to C:\Documents and Settings\All Users\Start Menu and cut Adobe Reader. Now paste it into C:\Documents and Settings\Your Username\Start Menu. You will also need to do this for Desktop icons.
