ɹəuəllıʍ ʇɐb Posted May 25, 2007 Report Share Posted May 25, 2007 Tableaux in Daikanyama has a new chef: Brit-born Scott Lawther came to Tokyo via the Park Hyatt in Sydney and Renaissance Resort in Okinawa. The Welcome Dinner for singer-pianist Betty Bryant, who will perform at the Tableaux Lounge until October, gave use a chance to taste some of Scott’s creations. And he’s already done a number of interesting changes to the menu – in just two weeks! We started with a chilled soup of green asparagus with crème fraîche and caviar – what a delight on a hot summer night! We also had some incredible fresh and tasty marinated katsuo (bonito) “tataki” with shiso and enoki mushroom salad. This was followed by a half portion of crispy sautéed foie gras on a toasted brioche with a sweet and sour Griottine cherry sauce. Since half portions are no problem at Tableaux we also had a go at the saffron risotto with parmiggiano, topped with a sautéed scampi, mascarpone cheese and fresh basil. The fish of the day was a grilled ruby snapper in a light bouillabaisse with moules and lots of different vegetables. The roasted “platinum” pork cutlet came with an incredible morel mushroom sauce. For dessert we just shared a spoonful each of a white chocolate panna cotta topped with a spiced strawberry gelée and a side of vanilla ice cream doused with Amaretto syrup.
