I get confused about CALs.

Let me break it down for you.

FIRST QUESTION:

If I have server 2008 or 2008 R2 activated, at default how users can connect to it to use things like file and print sharing etc.?

If I activate my server 2008 or 2008 R2 and I have 300+ users on my network who are connected to the server to use file and print sharing, shared internet connections etc, do I have to buy CALs for these 300+ users to be able to get connected to the server?

Or

Do I have unlimited connectivity to the server once I have it activated?

SECOND QUESTION:

Exchange server 2007/2010

If I have 3 server role installed on one server, how do I activate these server roles? Do I activate them on per server role? Or just activate the whole exchange server at once?

Another is if I have 300+ users on my network who are connected to use the exchange server, do I have to buy CALs for these 300+ users to be able to get connected to the exchange server and use it?

I would really appreciate it if someone could assist me understand this. I'm a MCITP student and researching on this.

How do I set up Exchange to utilize that? I'm not terribly familiar with server technologies but I am a quick learner. When answering please do not assume I have set everything up correctly, like i said i am basically a newbie to server technology. Please help been through everything from phoning Microsoft to 1and1.
