Quesadillas

You can use any of the following meats or your favorite... almost any will do:

Browned ground beef seasoned and cooked with chopped onion (drained well)

Grilled Steak cut into strips

Grilled white meat chicken cut into chunks

Cooked Bacon (crisp but not hard) (I always use bacon in all of them)

Flour Tortilla Shells

Softened Butter or margarine (softened for lightly spreading on tortilla shells)

Pico de gallo

Shredded Colby/Monterey Jack Cheeses

Sour Cream

Guacamole

Picante Sauce

Spread butter lightly on one side of the flour tortilla shell. Place buttered side of shell down, into a non-stick fry pan that has been preheated on medium heat. Sprinkle 2 tablespoons of bacon plus chicken steak or ground beef over entire shell, then add 1 Tbs. Pico de gallo, and 1/4 cup shredded Colby/Monterey Jack cheese over the bacon. Place the second flour shell on top of fixings, buttered side up. Cook for about one - two minutes just long enough to heat the inside ingredients and then carefully flip the quesadilla on the other side and finish cooking. The quesadilla should be heated through but not browned. ( The outside of the tortilla will be slightly browned but not completely). Remove quesadilla and place on a serving dish and cut into individual triangle (like a small pie) serving pieces. Serve quesadillas with your favorite guacamole, sour cream, and picante sauce.

Hash Brown Casserole

Ingredients:

2 lb. pkg. frozen Hash Browns or freshly shredded potatoes

16 oz. Sour cream

1 can cream of chicken soup

1 stick butter

1/2 C. Chopped onion

2 C. grated Cheddar Cheese

Preparation:

Place potatoes in a greased 9x13 inch pan. Season with salt and pepper. Melt butter in the microwave. In a bowl add minced onions, sour cream, and cream of chicken soup, and melted butter. Mix these items together. Pour soup mixture over potatoes; sprinkle with Cheddar Cheese. Bake at 350 degrees for 45 minutes, or until all is completely warm, and the cheese begins to melt.
