-pops- Posted October 26, 2018 Report Share Posted October 26, 2018 Bean & Sausage Soup Soffrito 1 carrot 2 celery sticks 2 leeks 2 medium potatoes 3 cloves garlic(or to taste) Chop all into small pieces and fry in a small amount of olive oil to soften. Add 1 500ml jar passata + half that volume of water (rinse the jar out with this) and two bay leaves Simmer for about 30 minutes. Add Sliced smoked Polish or other continental smoked sausage (Matteson’s Smoked Sausage will do, I suppose) amount to suit – about 200g and two 400g cans of beans (pinto, cannellini, black eye, kidney etc. NOT butter beans (they break up too easily), chickpeas (too hard) or baked beans. Fried smoked bacon or pancetta can be used instead of the sausage if preferred. Simmer for about 30 minutes and season with salt, pepper and sugar.
