They are, in fact, worms inside of the applications and can be turned off easily until patched. Why is this different from a hole in IE? I'm glad you asked. Because neither iChat nor Bluetooth are needed for normal OS operation, they are not part of the operating system, like IE is with Windows (yes, I know you can remove IE and use Daisy to update - but that's a pain).
