deuces wild Posted July 20, 2007 Report Share Posted July 20, 2007 BBQ Ribs (3 slabs - feeds a group of 6) 7 Oz. Worchester Sauce2 1/4 Tbs. Garlic Powder 2 Tbs. Brown Sugar 1 1/2 Tbs. Paprikas 1 Tbs. Salt 1 1/2 Tbs. White Vinegar -Mix ingredients and let sit for an hour or so to dissolve. -Cut slabs of ribs in half -One by one, generously rub the 1/2 slab with the rub on both side while under the plastic wrap -Double wrap in plastic wrap -Take the wrapped packages and wrap in aluminum foil and place on cookie tray-Put in fridge and let soak for 20 or so hours, turning the package once after 10 hours or so.-Put ribs in large pot, with wire rack to the bottom. Pour a bottle of beer in the pot, cover and bake at 350F for 1 1/2 hours (or when meat pulls 1" away from bone.-Finish on the outside grill, swabbing with your favorite BBQ sauce and turning once when browned/blackened.Enjoy! B) BTW: We are having 7 friends over tomorrow for a rib dinner and have 6 full slabs marinating in the fridge. Apart from the standard roasts plus veg, I tend to use whatever is available. Casseroles and stir fries are our favourite more informal meals. Tonight I will stir fry some diced lamb plus a variety of vegetables and mushrooms. We will have this with pilau rice. For a sauce I will use my old favourite, of one table spoon of runny honey, one table spoon of sweet red chili sauce, and one table spoon of dark soy sauce. I will also take pops hint of adding a dash of fish sauce. The oil will be a mix of olive and toasted sesame oil. It will be washed down with a bottle of red Chilean wine. If we keep an open thread on this, I'm sure we can get lots. There have been recipes posted before.As a follow-up to your ribs, deuces, how about some fruit kebabs? Dead simple but delicious. Done on a barbecue or under a grill (broiler).All you do is thread various fruits on to skewers, sprinkle lightly with a not-too-hot chilli powder and cook until starting to char. You can leave the chilli off if you like but it is surprisingly good however odd is seems. Suitable fruits are ones that are not too watery and hold together in the heat so: apples, pears, peaches, nectarines, strawberries, citrus fruit if you leave the inner membrane on etc. Sprinkle with powdered sugar just before cooking. Bananas fall apart but they are good if you slit them along the length and barbecue them in the skin. For the skewers use ordinary bamboo ones which have been soaked in water or use twigs and trimmings from lavender, rosemary and/or bay from your garden (if you have them).
