Do You Hate Sprouts?

If you dislike Brussels Sprouts, try this. I've converted a most ardent sprout hater into actually liking them - enough to eat them outside of Christmas dinner.

Trim sprouts and slice in half lengthwise (through the core). Boil for TWO MINUTES only.

Heat a small amount of oil in a wok or frying pan, add finely sliced red chilli (you know how much - it depends how you like them but don't omit them) and a tablespoonful of sesame seeds per 500g (1lb) of sprouts. Lightly fry to extract the flavour into the oil then add the drained sprouts and fry for 4 - 5 minutes until they just take a brown colour and are tender. Serve.

Well you should have got rid of the taste of brussel sprouts after all that.

I think (though it may just be think) that the smaller ones are sweeter, and if not incised with the cross cutting at the base, are sweeter still.....but, unfortunately, are still full of wind.

I think the wind generating propensity of sprouts is synthesised during the British style of cooking them - start boiling in the middle of November to make sure they're ready for Christmas dinner.

By this method, the gas synthesisers doesn't have time to be formed.

Something I'm trying later is to add caraway to the pan. I normally add caraway to cabbage when I cook it so it will be nice to try with sprouts.

As you might know, caraway (along with dill and fennel) is an good old fashioned carminative (wind reducer).
