andsome Posted April 2, 2004 Report Share Posted April 2, 2004 For the vegetarians here is a rather nice dish which is best when served with the brown sauce which appears in a different posting.BRAZIL NUT & SESAME SEED ROAST170 Grm Raw or Roasted Brazil Nuts55 Grm Sesame Seeds85 Grm Wholemeal Bread Crumbs30 Grm Coarse Oats2 Rounded Tea Spoons Mixed Dried Herbs2 Large Peeled TomatoesI Rounded Tea Spoon Marmite1 Quarter Pint Vegetable Stock1 Large or Two Small Chopped Onions2 Dessert Spoons Olive Oil30 Grm Wholemeal FlourChopped Garlic To Taste1. Chop the Brazil nuts in a food processor, fine or coarse according to taste. Place into a large bowl together with the sesame seeds, breadcrumbs herbs and oats. Chop the tomatoes and add them to the bowl.2. An egg may be added at this stage if required. This will help to bind the mixture to a more solid loaf.3. Dissolve the marmite in the hot stock and set aside.4. Gently fry the chopped onion in the oil. After a minute stir in the flour so that it absorbs the oil. Stir in the stock and marmite and simmer whilst stirring until the mixture thickens.5. Add this to the mixing bowl and mix everything well.6 Add the mixture to a well oiled or greased two-pound loaf tin. Bake at 190 degrees “C” or 170 degree “C” in a fan oven for 35 to 40 minutes. When cooked carefully run a knife round the edge of the loaf to loosen it and place it onto a hot baking tray. Any pieces, which may drop off, can be pressed back into place. Brush the surface with oil and bake for a further 5 to 8 minutes to give a slightly crunchy texture to the outside of the loaf. The loaf is delicious when served with a rich brown sauce and fresh vegetables to taste.The above will serve four normal people. I believe a large part of the crop had been affected by a fungus.By the way I find a food processor chops them a treat, better than struggling with a knife.
