For the vegetarians here is a rather nice dish which is best when served with the brown sauce which appears in a different posting.

BRAZIL NUT & SESAME SEED ROAST

170 Grm Raw or Roasted Brazil Nuts

55 Grm Sesame Seeds

85 Grm Wholemeal Bread Crumbs

30 Grm Coarse Oats

2 Rounded Tea Spoons Mixed Dried Herbs

2 Large Peeled Tomatoes

I Rounded Tea Spoon Marmite

1 Quarter Pint Vegetable Stock

1 Large or Two Small Chopped Onions

2 Dessert Spoons Olive Oil

30 Grm Wholemeal Flour

Chopped Garlic To Taste

1. Chop the Brazil nuts in a food processor, fine or coarse according to taste. Place into a large bowl together with the sesame seeds, breadcrumbs herbs and oats. Chop the tomatoes and add them to the bowl.

2. An egg may be added at this stage if required. This will help to bind the mixture to a more

solid loaf.

3. Dissolve the marmite in the hot stock and set aside.

4. Gently fry the chopped onion in the oil. After a minute stir in the flour so that it absorbs the oil. Stir in the stock and marmite and simmer whilst stirring until the mixture thickens.

5. Add this to the mixing bowl and mix everything well.

6 Add the mixture to a well oiled or greased two-pound loaf tin. Bake at 190 degrees “C” or

170 degree “C” in a fan oven for 35 to 40 minutes. When cooked carefully run a knife

round the edge of the loaf to loosen it and place it onto a hot baking tray. Any pieces, which may drop off, can be pressed back into place. Brush the surface with oil and bake for a further 5 to 8 minutes to give a slightly crunchy texture to the outside of the loaf. The loaf is delicious when served with a rich brown sauce and fresh vegetables to taste.

The above will serve four normal people. If you are exceptionally greedy this may not be the case

Anone notice that there weren't many Brazil nuts around last Christmas time and the ones that were available were very expensive?

I'm going to give this a go with the nuts remaining in the bowl after the December festivities - shelled, of course :D

You will definitely find a big improvement if they are shelled.

Joking aside, we couldn't get any Brazil's at Christmas either. I believe a large part of the crop had been affected by a fungus.

By the way I find a food processor chops them a treat, better than struggling with a knife.

This sounds pretty tasty if somebody will help me figure out the marmite replacement  :D

Obviously you can serve it with any sort of gravy, it's just that the rich brown sauce is quite distinctive.

You can get Marmite in the USA, the importer, Liberty, will tell you which distributors/stores sell Marmite in the USA . So give them a call and they can tell you where you can buy the stuff.
