Cheese and potato pasties

Ingredients for 8 pasties

250grm potatoes diced

2 X 375 grm ready rolled puff pastry sheets

I onion peeled and diced

1 egg for glazing

250 grm cheddar cheese grated

1 table spoon olive oil

Flour for rolling

Pinch of salt

Salt and pepper to season

Preheat the oven to 220 degrees C.

Par boil the diced potato in lightly salted water for 5 to 7 minutes, then drain and leave to cool

Fry the diced onion for a couple of minutes in the olive oil, leave to cool

Roll the pasty sheets on a floured surface. Use an upside down saucer or a small plate as a template, and cut four circles out of each pastry sheet.

Mix the diced potato and onion with the grated cheese, and seasoning, and place some of the mixture into the centre of each pasty circle.

Brush round the edge of each circle with beaten egg. This should ensure that the edges stick when rolled up.

Bring the edges of each circle together to make the traditional pasty shape, and crimp the edges firmly together. Then glaze the pasties with beaten egg.

Place the pasties onto a baking tray, and bake for 20 minutes until golden.

Ummmmmmmmmmmmm I can smell em from Spain, or is it the meat pastie in the oven now that we are going to have tonight. :thumbup:

Im gonna make some next week, is it best to cook them all then freeze some or can you freeze them uncooked ?

I don't really know how potatoes respond to freezing.
