andsome Posted March 18, 2005 Report Share Posted March 18, 2005 Cheese and potato pastiesIngredients for 8 pasties250grm potatoes diced2 X 375 grm ready rolled puff pastry sheetsI onion peeled and diced1 egg for glazing250 grm cheddar cheese grated1 table spoon olive oilFlour for rollingPinch of saltSalt and pepper to seasonPreheat the oven to 220 degrees C.Par boil the diced potato in lightly salted water for 5 to 7 minutes, then drain and leave to coolFry the diced onion for a couple of minutes in the olive oil, leave to coolRoll the pasty sheets on a floured surface. Use an upside down saucer or a small plate as a template, and cut four circles out of each pastry sheet.Mix the diced potato and onion with the grated cheese, and seasoning, and place some of the mixture into the centre of each pasty circle.Brush round the edge of each circle with beaten egg. This should ensure that the edges stick when rolled up.Bring the edges of each circle together to make the traditional pasty shape, and crimp the edges firmly together.
