I prefer mollasus sugar350grm mixed dried fruit275 grm self raising flour1 large egg, beatenPut the tea, sugar and dried fruit into a bowl and leave overnight. Next day, beat the egg, and stir it into the tea, sugar and fruit mix. Sieve the flower into the mixture either using a mixer or stirring by hand. Line a 1kg/2 lb loaf tin or two 1lb tins with baking parchment and spoon in the mixture. Bake in a pre-heated oven at 180 degrees C for 75 to 90 minutes. We had a couple of thick slices each this afternoon while it was still warm, thickly spread with butter.
