My kids LOVE IT!To serve four!!!Select 4 Bonless, skinless, thigh fillets of chicken!Use a meat tenderiser mallet, to beat each fillet, twice on each side.This stretches the meat, and makes it so much bigger!Put the meat to one side.Do the following:Prepare a Plate sprinkled heavily with Flour.Prepare an egg wash, as so. 1 egg beatened, good slurp of Lemon Juice, either fresh or artifical, salt and Pepper, and any other favourite Spices you want, just a tad of Milk to make it nice.Prepare a Tray with just Bead Crumbs!!The Meat you had to one side, just put same one by one, put firstly into the Flour, coating both sides fully, then into the Eggwash, making sure both sides are covered, then to the Breadcrumbs, making sure that ALL areas are covered, best to do it twice each side!!When fried with heaps of oil, they are delicious!!Finger Licking Good, for a fraction of the Price!! :censored: :D Quote Link to comment Share on other sites More sharing options...

I coat the chicken in buttermilk, then coat it in seasoned flour that I have added an envelope of Italian dressing mix, the dry kind, (I put the flour in a plastic bag and shake the chicken inside for less mess) then I coat the chicken in the buttermilk and flour once more then fry in an iron skillet. The double dip process makes for a thicker crunchy coating. I use this same method on boneless chicken breasts, and after frying and draining them on a paper towel, serve them with a side of honey mustard to dip them in.After preparing them as shown above and drain them well, I sometimes dip them in barbeque sauce that I add liquid smoke and brown sugar to and bake them for about 10 minutes. Carefully remove the seeds.Mix together mixed crushed nuts with grated cheese (your choice) garlic. breadcrumbs and egg yolk and fill the cucumber.Deep fry this in a light oil. (not WD40)The Sauce (my choice)Tinned tomatoes (not the cheap ones) a little tomato puree. fresh chopped garlic, lots of grished Black pepper a pinch of mixed herbs and a sprig of fresh mint (optional) simmer for 15 mins or so then sieve and add ectra garlic and thicken with potato flour.No Weights given as I have never bothered to weigh them.
