So here I am - quarter past 6am - looking for a decent recipe for stuffing that will please all.

It's for goose.

I tried out a pear and apricots with fresh breadcrumbs - very bland.

Then there was prune, apricots bacon - lovely but more of a sauce than a stuffing.

No1 daughter doesn't like fruit in the stuffing - No2 daughter doesn't like prunes.

I bought a nice stuffing from M&s if all else fails but would like a home-made one.

( I don't like sausage meat in the stuffing - another common ingredient)

One my Granny used to do was with chopped and fried bacon, roasted and crushed hazelnuts (she had hazel trees at the bottom of her garden), lightly fried onions, chopped sage, plenty of chopped parsley and fresh breadcrumbs. Season with fresh grated nutmeg, salt and pepper. I don't know the proportions - you mix things together until it looks right. Mix with hot water to make a stuffing-like mass and leave it a while for the flavours to blend.

DON'T put eggs in it - makes it hard and stodgy. The hazelnuts are best crushed or Magimixed to the size of Demarara sugar grains

I'm old fashioned and lazy. I am quite happy with Paxo Sage and onion. I usually find all these fancy stuffing recipes a bit peculiar in taste.

I like that too but usually add dried - ready to eat - apricots and a clove of garlic and chopped mushrooms if I've got them - plus a knob of butter. I never stuff the centre of a bird (!!??) I saw a programme once where the bird was roasted but at the end of cooking there were still live bacteria in the centre of the stuffing! I just put some in the neck end and cook the rest separately.

I want something a bit grander for a goose - not a thing we eat on a regular basis.

I'm old fashioned - that's why I like to make my own. Sorry, bit I think Paxo has too much resemblance to shredded cardboard held together with wallpaper paste and flavoured with Elliman's liniment.

In fact we NEVER put stuffing into a bird, we always cook it separately.

Same here.

For 50-odd years we have prepared the bird, done as artist has done hitherto, i.e. Paxo plus some other personal additions to make it flavoursome, and fed it to the growing family. Since last year our daughters in law have taken over. Last year the junior one did a superb feast and this year the senior one is taking over. She cooks well and we are looking forward to the Christmas dinner there. It is an odd sort of feeling, having been so busy in previous years in the run-up and on the day itself. There is very little shopping to do, you feel a bit spare but it is nice being looked after.

We know the feeling. Our son, and daughter plus grandchildren have ALWAYS come here for a few days. Last year for the first time ever we went to our daughters for Christmas day. We are doing the same this year. They will then go to her husbands parents on Boxing day. We will return home accompanied by our son who will stay for a few days. I missed doing the dinner last year, and will find it strange again this year.

I think you may find that if you first cook the goose, and put the stuffing in afterwards, using rolled up £20/£10 notes everyone will be more than delighted.

Unfortunately - we are the poor relations!

We are taking a turn this year - usually, we too, go to the daughters' to get fed. I'm happy to cook though.
