AlanHo Posted March 9, 2018 Report Share Posted March 9, 2018 Gin Pancakes Ingredients (For two diners) 3 large hens eggs – must be fresh 200 g plain flour 300 ml whole cows milk 400 ml Bombay gin 500 g Ice cubes. 500 ml Diet tonic water 1 Fresh Lemon Method Whisk the eggs until they are homogenous and frothy Add the flour 1 dessert spoon at a time – whisking continuously Now slowly add the milk whilst vigorously whisking to produce a batter mix the consistency of double cream. Set aside. Now put into 2 half litre glasses in equal measure 200 ml Gin 50 g ice cubes 250 ml tonic water Stir or shake as preferred.
