Can someone tell me how to stop a skin forming on top of custard as it cools down?

I should know this really  :(

:P

Why would you want to do that, we used to fight over who got the Skin when we were kids??

:innocent: :D

I have been reliably informed that to stop a skin forming on top of custard you sprinkle the top with a little caster sugar or you can try dotting it with little knobs of butter....

Mmm, the caster sugar one sounds good, have to try that.

Wish I had asked an hour ago as I made a trifle earlier and it's got a skin on it :(

Made it for hubby as it's his birthday today. He doesn't care either way but I hate it with a skin on.

Thanks all

Put the clingfilm directly on the custard or, better, cut a piece of greaseproof paper to the size and shape of the container with the custard in it and place directly on top. The idea is to stop the water contained in the custard from evaporating from the upper layers.

The caster sugar DOES work. :)

My method is the low calorie one :D

Very unfortunate time of year to have a birthday :(

The only thing nicer than custard skin in gastronomy is rice pudding skin. Both are now but memories for me after acquiring a lactose intolerance.

Rice pud skin, Double YUK!!

I was putting the clingfilm on top of the bowl :( not on top of the custard.

Agree with you re his birthday, everyone either forgets or hasn't got any money left after Christmas to buy him a pressie.

I sprinkle cooling custard with caster sugar and cover with a clean tea-towel....clingfilm is way too non-porous and encourages a skin....Custard needs to "breathe"

Tcha!! ;)
