Cheats Gazpacho

Couldn't be simpler. No cooking required.

1 x 1-litre carton of tomato juice

1 can of Heinz tomato soup

1 small shallot or one large size spring onion

garlic to suit

1 medium heat red chilli (if you want)

1/2 to 1 cucumber, peeled

Worcestershire Sauce to suit

Seasoning as required

 

Cut a few slices of cucumber to use as decoration and liquidise the remainder with the shallot/onion, garlic and chilli (if using). mix all together well and refrigerate for an hour or two.

Before serving, add a few ice cubes and the slices of cucumber.

 

Very nice with hot crusty bread. The temperature difference between the two makes it very palatable - unless you have sensitive teeth!

 

Note: it doesn't taste at all like Heinz tomato soup and lots of people have difficulty in identifying what it is that gives the character.

Gazpacho: What a coincidence, I have just been consuming this in Cala'n blanes, Ciutadella de Menorca. Yummy it was too.

 

I also had Salmorejo which I preferred. They are both lovely summer tomato soups (served cold) so what's the difference?

(note I cannot do garlic so have to leave it out)
