Tankus Posted May 23, 2004 Report Share Posted May 23, 2004 Just watching yet another "reality TV" proggie where some minor celebs and out to grass politicos are learning to become "chefs" ...Beef Wellington looked nice I get the feeling Ramsey treats his staff in this way (and not very played up for the camera) .......how would you get away with it , with all the (Human resources) laws and guidelines for "respect for people"..........Not an enviroment that I would be happy working in ....methinks ....! It is a very pressured environment and believe me the air is constantly blue in the middle of a busy service. I don't condone harrassment or bullying but anyone who has worked in this industry will know that what is said at the heat of the moment in a busy kitchen must be taken with big pinches of salt. They are created (I use that word with great caution) to be entertainment.There is no doubt that Ramsey is an excellent cook, I have eaten in his restaurants and can vouchsafe. That being the case, there would be no circumstances where he would he ever employ such a motley collection of fools, incompetents, idiots and suchlike as are being demonstrated in this and the other television programs he is, or has been, part of.I know people that have worked for and have been trained by Ramsey. They say that he is an excellent person and employer. He only loses his composure on provocation (as we can see on the TV programmes). As long as you do the job you are set to do and do it well, he is as calm as anyone. If you have problems with the job in hand, he will help and show how to do it properly. What he cannot tolerate is (as well as total incompetents) someone who, having been shown methods and even carried out those methods successfully, then goes and cocks the whole thing up and expects to get away with it and, even worse, offer it to customers.The people I know who have worked with the man would happily work with him again.Don't be too fooled by the programs, they are designed to be entertainment. I think not!It most certainly does not!There's that other terminally boring effort Big Brother starting again this week seemingly for its zillionth series. Apparently it was a flop last year why don't they just let it rot in peace. Well, I'll tell you why - it's because present day program planners and creators are so low in original thinking and are given a budget so low that they can't afford to provide real television with REAL performers so they are stuck with inarticulate members of the public, has-been show business people, failed or discredited politicians (and their partners/hangers-on) and general rabble who have never done anything to benefit anybody or any thing not least mankind but have become known as celebrities - people of the ilk of Tara Palmer Tomkinson, Lady Hervey (pronounced Harvey) something or other and loads of others from the same mould. There is no doubt pressure on providers to supply endless channels and there isn't the money available to pay for the production of quality material. Instead of giving 4 channels with 5 hours a day of decent stuff worth watching we have 400 channels with 5 minutes of stuff worth watching.Just occasionally there is something that I feel it is worth watching, but most of the time I watch things because I can't be bothered to do anything else. Ever since the late 60s /early 70s, when the American business ethic of "cost saving" unfortunately crossed the pond, every product and/or service has been sacrificed to cost reduction. Some Yankee guru, whose name, for the moment, is infinitely forgetable, came up with the idea that if you could save say 10% on manufacturing cost, that would be better than making 10% extra profit, because you would not need to increase productivity or quality to get it!!! A moments thought will reveal that all cost is labour. The iron ore costs nothing...it is the labour of getting it out of the ground where the cost is incurred, as is the matter of then converting it into metal. Food and energy are just the same. Everything is labour cost. So the Yank was just basically putting people out of work. This meant that money had to be borrowed to buy more efficient machinery, and even more cost savings had then to be found to pay for the interest, in addition to repaying the capital. Ultimately we had the culmination, in the Maggie era, of millions out of work, but the ethos of cutting costs remains. Currently every product or service on the market is there simply as something around which cost reductions can be built. The result is cheap, shoddy, ill conceived/designed products and services, with those who have contrived the cost saving being extremely well reimbursed and those compelled to make/perform being less well paid and extremely disspirited and apathetic. You think I am making all this up? I was Quality Assurance and Technical Services Manager for a big American multinational (household name) during the 60/70/80s.
