Slow roast garlic chicken with Tesco Finest sage and red onion stuffin' (Pops recommendation) to which I have added thyme and a touch of chilli, roast maris piper spuds and mixed veg.

 

I bought a chicken roaster a few months ago, http://tinyurl.com/y9effsqw - and find it cooks the chicken much better than when lying in a roasting dish.

 

Followed by strawberries and cream.

 

Accompanied by  a N.Z. Malborough cabernet blanc.

Strips of steak, quick fried with onions and chopped fresh tomatoes added at the end. Served with Parmentier potatoes and broad beans.

The tomatoes are cooked just enough to soften and release their juice.

I had southern fried chicken with chips and peas. I do the coating myself, mixing beadcrumbs, herbs and spices to suit my mood.  It means that I will now have to dispose of the oil in one of my fryers - the flavour of Southern fried fish does not appeal.

 

Here is my favourite mix

1/2 teaspoon ground cayenne pepper

1 teaspoon freshly ground cumin

1/2 teaspoon ground mace

1 teaspoon freshly grated nutmeg

1 teaspoon paprika

1 teaspoon freshly milled black pepper

1 teaspoon ground ginger

2 teaspoons crumbled dried basil

2 teaspoons bay leaves ground to a powder

2 teaspoons crumbled dried oregano

2 teaspoons crumbled dried sage

2 teaspoons crumbled dried thyme

I small tub of golden breadcrumbs
