Whenever the local supermarket has a glut of any vegetable, I buy a quantity, make soup with it, then freeze it. Great with a chunk of fresh crusty bread.In fact I bought a huge box of tomatoes from the Cash & Carry just a week or so ago, when they were overstocked. The people who "do" it are called processors, but should really be called adulteraters, because their main mission in life seems to be the addition of copious quantities of pepper and diluants (mainly stiffened water).
